Cheese Scones

Ingredients

  • 2 cups flour
  • 3 tsp baking powder
  • large pinch salt
  • sprinkle of cayenne pepper/chilli powder (optional)
  • 1 cup strong cheddar cheese
  • 3 tsp vegetable oil
  • ½ cup milk (maybe a bit more depending on how it mixes)
  • 1 egg

Method

  1. Sift flour, baking powder, salt and cayenne pepper into a large bowl.
  2. Add the cheese and mix through the flour mixture.
  3. Beat the egg and milk together in a separate bowl and add the oil.
  4. Pour the milk/egg/oil mixture into the flour mixture and using a metal spoon / fork, mix the dough until it clumps together, but is not too dry. If too dry, splash a bit more milk in to use up the flour.
  5. Press the dough out on a flat clean floured surface until it is about 5mm thick, then fold it over on top of itself (this gives the finished scones the natural "break" to cut open), flatten it again, using the palm of your hand. Do not use a rolling pin as it is too heavy and will prevent the scones from rising.
  6. Cut out your scones out by using a round cutter (you decide on the size) or if you don't have a cutter handy use a drinking glass.
  7. Place them on a baking tray, pop them in the oven at 180 celsius for fifteen to twenty minutes.

Gingerbread Bears

Ingredients

  • 1/4 cup butter
  • 1/4 cup sugar
  • 1 ½ tablespoons of golden syrup
  • 3/4 cup self-raising flour
  • ½ teaspoon bicarbonate of soda
  • 1 rounded teaspoon ground ginger
  • For decoration some raisins, icing, silver balls, smarties - or whatever takes your fancy!

Method               

  1. Melt the butter, sugar and golden syrup in a large bowl, stirring occasionally.
  2. Sift the flour, bicarbonate of soda and ground ginger into the bowl.
  3. Stir the melted ingredients into the dry ingredients until you have a fairly stiff dough.
  4. Turn out onto a lightly floured surface and roll out to a thickness of about ½  cm.
  5. Cut out bears and place on a greased baking tray with a palette knife.
  6. Add raisins to make eyes and buttons
  7. Cook at 190 C for 8-10 minutes and allow to cool.
  8. Decorate with icing etc

Speedy Pizza

Ingredients

Base

  • 3/4 cup self-raising flour
  • 1/4 butter
  • 3-4 tablespoons milk
  • pinch of salt
  • 1/4 cup grated cheese

Toppings

  • tomato sauce
  • cheese slices, cut into shapes
  • sliced mushrooms
  • sliced peppers
  • sliced ham
  • tinned sweetcorn

Method

  1. Preheat oven to 220 C
  2. Put the flour, salt and butter in a mixing bowl
  3. Chop up the butter and rub into the flour until breadcrumbs form
  4. Add grated cheese and milk.
  5. Mix together to make a dough
  6. Divide into 2 or 4 balls and roll each ball into a circle
  7. Lay the circles of dough in a greased baking tray.
  8. Spoon tomato sauce onto the dough and spread evenly to the edges
  9. Decorate
  10. Cook for 15-20 minutes until the edges are golden brown.
